1st Course: Half Shell Scallops – Chorizo – Fennel – Boudin Noir – Pork Scratchings – Parsley – matched with Grant Burge Pinot Rose (Barossa)

2nd Course: Sous Vide Buttermilk Chicken – Wild Rice – Cauliflower – Fennel Pollen – paired with Stonier Chardonnay (Mornington Peninsula, Victoria)

Main Course: Beef Entrecôte- Onions – Slippery Jacks – Veal Shank Jus – Garlic Flowers – matched with St Hallett Blockhead Barossa Shiraz Grenache (Barossa SA)
